Lime & Grapefruit Rice

Super flavourful rice, i simply prepared with freshly squeezed lime and grapefruit juice and prepared this delicious fabulous looking rice, just serve this wonderful looking one pot meal with pan fried spicy potatoes and am damn sure you will definitely have a filling and satisfying lunch..Usually we make lemon rice with freshly squeezed lemon juice, but since ever i tried once rice with grapefruits,i have completely got hooked with that mildly sweet rice, for a change this time i combined both lime and grapefruits and we just love it..


2cups Cooked rice
1/2cup Lime & grapefruit juice
1/2tsp Mustard seeds
1tsp Urad dal
1tsp Channadal
1/2tsp Ginger (grated)
3nos Green chillies (slit opened)
Few cashew nuts
Curry leaves
1/4tsp Asafoetida powder
1/2tsp Turmeric powder
Salt
Oil +1tbsp Ghee


Heat enough oil, fry the mustard seeds, urad dal,asafoetida powder,curry leaves,channadal, green chillies, cashew nuts, curryleaves and turmeric powder..Now add the tempered spices,freshly squeezed juices as per need to the cooked rice, add salt  and ghee,mix everything well and keep aside atleast for half an hour before serving..

Enjoy with spicy potato fries..

I have always kept a distance from Grapefruit because it is extremely sour. But, adding it to rice like lemon rice is a good idea :)
