Baked Bread & Chickpeas Cutlet With Bean Sprouts

We usually buy baguette (the french bread) atleast thrice a week, sometimes after having our dinner most of those bread slices will be sitting in my bread bag and they will turn hard like a rock..Usually i do bread toast with those bread slices, this time i soaked them water and and with some leftover cooked chickpeas, leftover bean sprouts i prepared a simple bread cutlet for our evening snacks, instead of shallow frying this cutlets i baked them in oven and with ketchup this baked bread cutlet vanished within few minutes, we enjoyed our baked protein packed and fabulous cutlets also all my leftovers turned our evening snacks quite a filling snack..This baked bread and chickpeas cutlet goes to Sunday Snacks-Healthy Snacks guest hosted by Divya of Dil Se..also goes to MLLA-21 guest hosted by Superchef, event by Susan and finalmy to Daisy Blue's CoL-Leftover Delicacies...


1no Baguette (cut as pieces)
1cup Cooked chickpeas
1no Onion(chopped)
1/4cup Bean sprouts
2nos Green chillies (chopped)
10nos Mint leaves (chopped)
5nos Curry leaves
1tsp Garam masala
Salt
Oil for baking

Soak the baguette pieces for few minutes,smash the cooked chick peas and clean the bean sprouts and mash with ur fingers, press the soaked baguette with ur palms to squeeze out the water, take the mashed baguettes,smashed chickpeas and the bean sprouts, chopped green chillies, curry leaves,chopped mint leaves, garam masala, salt in a large vessel, heat a few drops of oil, saute the chopped onions... add the sauteed onions to the bread-chickpeas mixture..

Preheat the oven to 350F, line a baking paper over a baking sheet, brush the baking sheet with oil, make medium size cutlets with the spiced bread and chickpeas mixture, gently brush the cutlets with some oil and bake the cutlets in middle rack for 20-25minutes..Enjoy the baked cutlets with ketchup..

Kadhamba Pakoda/Mixed Veggies Pakoda

Sometimes we feel like having some crispy snacks na..this pakodas is completely a leftover magic yeah!! i have added all the left over veggies which were laying since a quiet long in my fridge and prepared this pakodas..U can add any veggies to make out this pakodas and am damn sure that this pakodas will definitely vanish within few minutes...Eventhough this crispy pakodas are deep fried but the veggies in this pakodas will make out truly delicious this pakodas, one more easy way to eat veggies and quite a best way to eat veggies that too for picky eaters..A prefect, evening snacks to enjoy without any side dish,.


2cups Mixed veggies ( i used carrots,spinach,zucchini,broccoli florets eggplants,potatoes,cabbage,onions,french beans chopped everything as small chunks)
2cups Besan flour
1cup Rice flour
1tsp Baking powder
5nos Curry leaves
Salt
1tsp Fennel seeds (crushed)
Oil

In a large bowl, add all the veggies, besan flour, rice flour,baking powder, curry leaves, crushed fennel seeds and salt..springle some water and turn everything as thick paste..

Heat the oil and fry this mixed veggies pakodas in small batches and drain the excess of oil with a paper towel..Enjoy the pakodas with hot coffee..

Brinjal Podi Curry/Kathirikkai Karamadhu

Brinjal or eggplants, watever those veggies tastes marvellous as curry and its always my favourite with hot steaming rice topped with ghee and sambar, absolutely divine na!!...i prepared this podi curry with healthy stuffs in it...With my healthy spice powder i have posted already here which turned out this podi curry fantastic and really quick to make out..Within few minutes this dry curry with brinjal was ready to relish and goes awesome with any sort of gravies, even better with rotis and parathas...Prepared with gingelly oil, this brinjal karamadhu tastes fantastic and yummy..Enjoyed having this karamadhu as side dish with simple tomato sambar topped with ghee, absolutely delicious na!!!..Voila this dry curry goes directly to CWS-Coriander Seeds guest hosted by RV, event by me since the main ingredients for this curry is definitely the coriander seeds..


1/2kg Purple brinjals (chopped )
3tbsp Karamadhu Podi
1no Onions (chopped)
5nos Garlic cloves (minced)
1tsp Mustard seeds +Urad dal
1/2tsp Red chilly powder
1/2tsp Turmeric powder
Few curry leaves
Salt
3tbsp Gingelly oil

Heat the gingelly oil, let splutters the mustard seeds and urad dal..add immediately the chopped onions ,curry leaves and minced garlic cloves and saute until the onions transculent...now add the chopped brinjals saute along with salt, turmeric powder and red chilly powder and cook everything in simmer for few minutes..when the brinjals get half cooked, add the karamadhu podi and cook in medium flame until the oil gets separates..

Serve with any sort of rice dish...

Stuffed Cheese, Spinach & Oats Buns

I have tried many times buns with spinach, this time i want to make them somewat cheesy  with some left over cheese which i bought quiet a long back, as everyone at home love this famous french cheese called 'Baby bel' much, i prepared this buns as savoury buns with a spinach puree and rolled oats with whole wheat flour spiced with red chilly flakes, parsley leaves, flax seeds and pepper powder,salt while i used all-purpose flour for dusting...This buns tastes awesome with many healthy stuffs in it and cheesy ,u can definitely see that melting cheese in the picture,while having this buns needless to say that we truly enjoyed each and every bite of this bun, we had our dinner with this spinach buns along with a bowl of warm pumpkin soup..both together turned out our dinner filling, healthy also prefect...


2cups Whole wheat flour
1cup Rolled oats
1/4cup Spinach puree
1/4cup Olive oil
2tbsp Active dry yeast
1tsp Sugar
1tbsp Salt
1tsp Red chilly flakes
1tbsp Flax seeds
1tsp Dry parsley leaves
1/4tsp Pepper powder
8nos Babybel cheese or any other cheese of ur choice
All purpose flour for dusting

Combine the oats, whole wheat flour, red chilly flakes, flax seeds,dry parsley leaves, pepper powder in a large bowl..meanwhile in a cup of luke warm water, add the active dry yeast, sugar and salt and let this mixture sit for 5 minutes, to get a foamy yeast...Add this foamy yeast ,olive oil and spinach puree to the flour and spice mixture and knead as dough until u get a soft and smooth dough..arrange this soft dough in a greased bowl and keep this bowl in a warm place for an hour with lid closed until the dough double their volume..

Preheat the oven to 350f..After an hour, knead the dough,dust with all purpose flour and divide them 8 medium sized balls...knead the balls one by one, flatten them with ur palms, place a babybel cheese ,bring the edges together and roll them as round buns, arrange the cheese stuffed buns over a baking sheet lined over a baking tray..bake these cheese stuffed buns for 25-30minutes until the crust turns golden brown..

Enjoy this buns warm, those melting cheese will definitely makes this buns more tasty ..

Spaghetti With Soyachunks

Sometimes i like to make out pasta dishes with meats and seafoods, at the same time i also go for vegetarian version of pasta dishes, my one of those vegetarian dishes is this soyachunks with spaghetti..This spaghetti is really very quick to prepare also filling, nutritious, a real feast for vegetarians and definitely a delicious dish to enjoy without any guilt...This pasta dish goes for simple ingredients and easy breezy lunch to enjoy with a simple salad...Wat all u need is spaghetti, onions, home made tomato puree, pepper powder, salt and cooked soyachunks and dry parsley leaves...Just cook the spaghetti and toss everything with a simple sauce prepared with soyachunks and veggies...Everyone at home enjoy always this soyachunks spaghetti whenever i prepare it.


250grs Spaghetti
25nos Soyachunks
1no Onion (chopped)
2nos Tomatoes (grounded as puree)
1tsp Dry parsley leaves
Pepper powder
Salt
Olive oil

Cook the soyachunks in water and salt and drain the excess of water, same time cook the spaghetti with enough salt and oil in a large vessel, once the spaghetti get cooked drain the excess of water, wash the spaghetti with running water and keep aside..

Heat the olive oil, saute the onions and dry parsley leaves until the onions get well cooked, add the tomato puree to the cooking veggies with enough salt and cook everything in high flame until puree gets thickens, immediately add the cooked soyachunks,pepper powder and saute for few minutes, finally add the cooked spaghetti and toss everything gently until the veggies and soyachunks get well mixed..

Serve hot with simple salad..

Cucumber & Mint Juice

Cucumber and Mint juice, a prefect thristy quencher,healthy juice for hot summer...Cucumber fleshs are primarily composed of water also vitamin c and caffeic acid which helps to soothe the skin irritation and also rich in fiber, potassium and magnesicum..Its highly recommended to take cucumbers during summer to maintain our body heat, silica present in cucumber improve the health of skin as the cucumber has high water content naturally..Needless to say the health benefits of mint leaves, i combines both together to make out this refreshing green juice with salt and sugar...This juice tastes awesome and definitely a body cooler while its too hot...Sending this colourful and catchy juice to Madhuri's Serve me some..Juices, Shakes & Smoothies..



2cups Cucumber pieces
5-7nos Mint leaves
Salt
Sugar

Blend together the cucumber pieces with mint leaves and water with salt and sugar as per need..Strain the juice and serve chilled or with ice cubes..

Refreshing drink na!!

Spinach Masiyal (With Coconut Milk)

I tried out usual spinach masiyal by using coconut milk and tempered the spices with coconut oil, this spinach masiyal tastes fabulous and everyone at home loved the coconut flavour in this spinach masiyal, acutally i got this idea of making out spinach masiyal coz of some leftover thick coconut milk which i prepared for making some kurmas were laying in fridge and i tried adding those leftover coconut milk while cooking the spinach leaves instead of cooking the spinach leaves just with water.....Different masiyal which tastes too delicious,truly this coconut milk spinach masiyal tastes too yummy and healthy to enjoy with any spicy side dish.


2cups Spinach leaves (chopped)
1cup Thick coconut milk
1/2cup Water
6nos Garlic cloves
1tsp Mustard seeds+urad dal or Vadagam
3nos Dry red chillies(broken)
Salt
1tbsp Coconut Oil

Bring boil the coconut milk and water together, add the spinach leaves and cook in medium flame until the spinach leaves get cooked...Meawhile crush the garlic cloves,keep aside..,heat the coconut oil, let splutters the mustard seeds, urad dal..add the dry red chillies and fry until they turns brown, finally add the crushed garlic and fry for few minutes, put of the stove...Mash the cooked spinach leaves with a hand blender along with the tempered spices and garlic with enough salt..

Serve along with rice and any side dish..

Tandoori Paneer Pizza - Indian Flavoured Pizza

I love anything with paneer especially pizza with paneer, just typing paneer pizza makes me drool...that much addict to pizza with paneer, i tried out this tandoori paneer pizza sterday for our dinner with a pizza base prepared with all purpose flour and wheat flour with baking soda instead of yeast mixture, this baking soda pizza base need an hour to raise also this pizza dough suits prefectly to make out this paneer pizza and i prepared a tandoori paste with store bought tandoori masala with jeera powder, coriander powder, garam masala, ginger garlic paste and dry basil leaves with curd..I marinated the paneer cubes in this curd-tandoori masala for an hour and used them over the pizza base without any pizza sauce....Finally i topped the pizza base with red onions, marinated paneer cubes, bellpeppers and few shredded cheddar cheese...We had a delicious dinner with this droolworthy pizza and a simple lettuce salad...Sending this tandoori paneer salad to Global Kadai-Indian Flavoured Pizza guest hosted by Lavi, event by Cilantro & to Champa's Bake Off Event...


Pizza Base:
2cups All purpose flour
1/2cup Wheat flour
1tsp Baking soda
1tsp Baking powder
1+1/2cups Luke warm water
1tsp Sugar
Salt

Sieve the all purpose flour, wheat flour, baking powder, baking soda together and pour the luke warm water,salt and sugar,mix everything well and knead as soft dough...arrange the dough in a greased bowl and keep in a warm place for an hour..

Tandoori Paneer:
250grams Paneer (cubed)
3tbsp Curd
1/2tsp Jeera powder
1/2tsp Coriander powder
1/4tsp Garam masala powder
1tsp Tandoori masala powder
1/2tsp Red chilly powder
1tsp Ginger garlic paste
1tsp Dry basil leaves
Salt

Marinate the cubed paneer with curd, ginger garlic paste, jeera powder, coriander powder, garam masala powder, tandoori masala powder & red chilly powder with dry basil leaves and salt, let this marinated paneer cubes sit for an hour, prepare this marination at the same time while preparing the pizza base..

Assembling the Pizza:
1cup Bellpeppers (cubes)
1no Red onions (diced)
1/4cup Cheddar cheese (shredded)
Few pinches of Pepper powder


Preheat the oven at 350F..Roll the pizza dough as a medium sized circle with a rolling pin, arrange the marinated paneer cubes without the marination curd, arrange the bellpeppers cubes, diced onions, shredded cheddar cheese over the paneer cubes and finally springle the pepper powder over the cheese...Bake this pizza in middle rack for 20-25 minutes, until the crust turns golden brown..

Chocolate Swirl Buns

Chocolate swirl buns, i can say that this swirl buns is our recent favourite...We just love it..those oozing chocolate and the aroma of the baking makes me drool ..Yeah i cant still forget making out this swirl buns i truly enjoyed making this swirl buns and also enjoyed having them...Instead of using chocolate chips i grated a dark chocolate bar and prepared this swirl buns...This buns tastes fabulous while they were still warm and the melted chocolate tastes marvellous while having this buns..Even this buns arent that much healthier, we enjoyed it..Its really a pleasure to enjoy sometimes these tempting baked goodies even if these bakes are loaded with butter and eggs...These swirl buns are going directly to BBD#28 - Bread Buns guest hosted by Rachel of Tangerine's Kitchen& to Champa's Bake Off Event, finally to Susan's Yeast Spotting...


3cups Bread flour /All purpose flour
1tbsp Active dry yeast
2tbsp Sugar
1/2tsp Salt
2no Eggs (beatened)
1/2cup Butter (softened)
1no Dark chocolate bar (grated)
1cup Luke warm milk
Water as per need

Add the active dry yeast, sugar and salt to the luke warm milk and let this mixture sit for 5 minutes,until the yeast turns foamy..Meanwhile add the softened butter, beatened eggs,flour and the foamy yeast mixture ,water (if needed) and knead as a soft  and smooth dough, arrange this soft dough in a greased bowl and keep this bowl in a warm place for an hour with lid closed until the dough double their volume..


After an hour, knead the dough again and flatten the dough with a rolling pin as a large rectangular disc, springle the grated chocolate chunks over the dough and roll the dough to get a loaf...With a sharp knife, cut the love as medium sized pieces..line a baking sheet over a round baking pan and arrange this swirled buns and let the buns sit again in a warm place for half an hour..Preheat the oven to 350F, arrange the baking pan in the middle rack of the oven and bake the chocolate swirl buns for 25-30minutes until the crust turns golden brown..

Enjoy warm!!!

Orange Lassi

Quick,easy, healthy and tasty orange lassi, prepared simply with beaten yogurt, orange segments, maple syrup and milk..Orange lassi tastes fantastic while its hot,also for cold winter since oranges are rich in vitamin C coz this powerful vitamin protect our body against many harmful elements...Its helps for lowder cholestrol, high blood pressure etc..Large consumption of oranges will decrease the outpouring of mucus secretions from the nose, calcium presents in orange helps to protect and maintain the health of our bone and teeth..So needless to say how healthy and refreshing this lassi is...



1cup Oranges (cut as segments)
2cups Thick Yogurt
Maple syrup as per need
Ice cubes
Water

Blend the orange segments, thick yogurt, maple syrup with enough water as smooth drink...serve immediately with ice cubes..

Enjoy the refreshing lassi!!!

Loukoumades - Greek Honey Puffs

Loukomades or Loukoumathes, its a kind of deepfried dough pastry made with a dough prepared with all purpose flour, egg and generous amount of baking powder, later this fried puffs are soaked in a sugar syrup or drizzled with honey and cinnamon which sometimes served, sprinkled with sesame seeds or almond flakes...In Greece, this loukoumades are commonly spiced with clove and cinnamon in a honey syrp and then sprinkled lightly with powdered sugar, this honey puffs are usually made during the New year's eve to celebrate the name day of St Barbara also the Greek Jewish community prepare this small deep fried honeyed puffs at Hanukkah..Easy puffs to enjoy for evening snacks and the honey syrup served along with the puffs turn out this puffs more tastier than the sugar syrup..Needless to say we really enjoyed exploring this Greek cuisine,we loved it...Sending this honey puffs to AWED-Greek guest hosted by CL,event by DK...


2cups All purpose flour
3tsps Baking powder
4tbsp Sugar
4tbsps Oil
3/4cup Milk
1no Egg
Oil
Honey for drizzling
Few pinches of Cinnamon powder
Almond flakes

Stiff the flour with baking powder in a bowl, add the sugar,oil, milk, egg and mix everything as smooth batter with a wooden spoon..Heat the oil for deep frying ,when the oil is hot, drop the batter by a small teaspoon and fry until golden...keep a small bowl of water aside to dip ur finger before pushing the batter into the oil,its avoids the batter from sticking.. Drain the fried puffs in paper towel...

While serving drizzle the puffs with honey, springle few almond flakes and pinch of cinnamon..serve immediately..Enjoy warm...

Revani - Greek Semolina Cake With Syrup

Revani, the Greek semolina cake with syrup is quite a popular cake in Greece which is always available in Greek pastry shops, this cake is prepared almost with a combination of flour and semolina and soaked in sugar syrup prepared with lemon juice...In some areas of Greece,this cake is prepared with walnuts ,almonds or rice also instead of butter some may go for oil..This cake tastes really very light and its a delightful dessert to enjoy after a fantastic lunch, a perfect snack with a cup of coffee...I really enjoyed making this quick,easy and delicious cake and each and everyone at home relished each spoon of this syrupy semolina cake...I have prepared a simple version of revani, but u can definitely decrease the quantity of semolina by adding almond powder or vice versa...




2cups Semolina (fine grind)
1+1/2cup All purpose flour
2tsp Baking powder
1tsp Baking soda
1cup Sugar
1cup Butter (softened)
6nos Eggs (separated)
1cup Whole milk
1tbsp Orange peel (grated)
2tbsp Water

For Syrup:
2cups Sugar
3cups Water
2tbsp Lemon juice

Preheat the oven to 350F..Mix the flour along with semolina, baking powder, baking soda...Beat together the egg yolks, sugar and grated orange peel until its turns light and creamy..add the flour mixture and milk and beat everything until they get completely blended...Whip the egg whites with a pinch of salt to stiff peak stage and with a wooden spooon stir carefully the batter until they get thoroughly well mixed..Meanwhile combine the sugar and water given for making syrup in a saucepan and stir until the sugar get dissolves, boil for few minutes and finally add the lemon juice and put off the stove..


Pour the cake butter in a greased and floured baking rectangular pan and bake the cake for 30minutes in middle rack, once the cake get baked, allow the cake to cool a bit...Pour the luke warm syrup over the cake,evenly and carefully starting at the outside edges..Allow to cool completely before cutting into small squares or diamond shaped pieces...

Beetroot & Banana Smoothie

A smoothie is a blended, chilled, sometimes sweetened beverage made from fresh fruit or vegetables and in special cases can contain chocolate. In addition to fruit, many smoothies include crushed ice, frozen fruit, honey or frozen yogurt, although some smoothies are 100% fruit. They have a milkshake-like consistency which is thicker than slush drinks. This beetroot and banana smoothie is an easy breezy smoothie which i prepared with cooked beetroot chunks, banana,honey and yoghurt..Tastes fantastic when served chilled also catchy smoothie, kids will definitely like it..


1no Beetroot (cooked and chopped)
2nos Bananas (chopped)
2cups Yogurt
Honey / sugar as per need
Ice cubes

Blend the chopped beetroots,bananas and yogurt with enough honey/sugar with ice cubes as smoothie..Serve immediately or chilled..

Home Remedy - Orange Peel Face Pack

Home made beauty tips are extremely fantastic without spending more money also coz of the natural ingredients we need to prepare them..I always goes of moongdal powder or cucumber face mask whenever i feel like preparing a face mask..My lastest face pack is this orange peel powder prepared by drying the orange peels and making them as powder, a prefect face pack which help to remove the tan,excellent for prevention and treatment of acne, brighten your skin also balance the skin tone by giving a radiant look without any cost...Instead of throughing the orange peels just dry them in the sun or besides the heater(if its winter)...A fantastic home remedy for young gals who were suffering from acne and oily skin..Am sending this Orange peel face pack to Home Remedies Series 2 guest hosted by Ruchikacooks, event by A2Z Vegetarian Cuisine...


1cup Orange peel (dried in sun)
Milk as per need

Grind the dried orange peel in a mixie as fine powder, conserve this orange peel powder in an air tightened box, use as per need..Put this face pack twice a week..


Make a face pack with a tablespoon of this orange peel powder and milk, make a paste and apply over the face and neck...Once they get dry, wash the face pack with water..U will see definitely ur face turns absolutely smooth ,free from oily skin after frequent use of this face pack...

Garlic Baby Potatoes-T&T from The Singing Chef

After trying out few recipes from Arundathi's space, i choosed this garlic baby potatoes as this stir fry sounds extremely easy and flavourful...This baby potatoes stir fry doesnt goes for chopping neither grinding spices, just with few ingredients this fantastic, spicy and aromatic garlic baby potatoes are ready within few minutes...I do the same with potato chunks by roasting with chopped onions and spices but this simple garlic baby potatoes tastes extremely awesome and fantastic with curd rice, a prefect feast for potato lovers like me..Do try this simple but yet a fantastic baby potatoes friends, u wont even regret and am damn sure that peoples whoever like the potatoes will really fond for this garlic baby potatoes...Needless to say that am sending this beautiful baby potatoes to T&T-The Singing Chef guest hosted by Divya of Dil Se, event by Zlamushka..U can find the original recipe here..

5nos Garlic cloves (crushed finely)
1+1/2tsp Chilly powder
1/4tsp Turmeric powder
Salt
Oil

Heat the oil and fry the cumin seeds, once the cumin seeds crackle add the finely crushed garlic, chilly powder and turmeric powder, fry the garlic and spice powder in simmer for few minutes, finally add the cooked baby potatoes and salt,cover and cook the potatoes for few minutes until the oil gets separates..

Serve as side dish...

Microwave Mixed Veggie Halwa

Beautiful, catchy and delicious halwa prepared with finely shredded carrots, beetroots and potato in microwave oven which i choosed from Priya's Mixed Veggie Halwa , this halwa tempted me a lot and i have completely fallen in love...Priya used sweet potato, but i used potato instead of sweet potatoes but adding a small potato didnt changed that much the taste of this delicious halwa also the cooking time changes according to the microwave oven, this halwa was ready less than half an hour...Easy breezy halwa to enjoy without any guilt and my DH almost finished the whole bowl of halwa..We just loved it..Thanks Priya for sharing this fantastic mixed veggie halwa and we relished each and every spoon..This microwave halwa goes directly to MEC-Celebrating Bloggers guest hosted by Jayashree, event by Srivalli...


2cups Mixed veggies (carrot, beetroot, potato finely shredded)
1cup Milk
1cup Sugar
1/4cup Ghee
1cup Milk
1/2tsp Cardamom powder
Almond flakes

Mix the veggies in a microwave safe bowl with ghee and cook in high for 10minutes (stir twice in between), add the milk and sugar and cook again for 10minutes..finally add the cardamom powder and cook everything again for 8minutes in high..Garnish with almond flakes and enjoy..

Galaktoboureko/Greek Custard Filled Phyllo Pastry

Galaktoboureka, delicious Greek dessert prepared by making a custard with fine semolina, eggs and sugar flavoured either with lemon or orange in phyllo...Its may be made in pan or with phyllo layered on top or else rolled into individual for long servings...This phyllo pastry looks similar like French dessert called Mille-feuille,phyllo sheets baked with custard and finally this pastry is soaked with lemon flavoured or orange flavored clear syrup with sugar..The name galaktoboureko comes from the word milk in greek and bourek is the Turkish origin word burek for pies which means the milk pie or custard pie...Its a real treat to enjoy while snack time with coffee or tea time or else as dessert after lunch...I enjoyed making and everyone at home relished each and every spoon of this custard filled phyllo pastry..



6nos Eggs
1cup Sugar
1cup Semolina (finely grind)
1/2tsp Lemon peel (grated)
1tsp Lemon juice
6cups Milk
1/4cup Melted butter
10sheet Phyllo sheets

For Syrup:
1cup Sugar
1cup Water
2tbsp Lemon juice
1tbsp Lemon peel(grated)

Make the syrup:
Bring the sugar, water to boil in medium heat, add the lemon peel and cook everything simmer for 10 minutes, remove from the heat and add the lemon juice,set aside and let them cool..

For Filling:
Beat the eggs with sugar until it turns creamy and smooth, add the semolina, lemon juice and grated lemon peel and beat for few minutes...Continue beating and add the milk and 2tbsp melted butter...beat for another few minutes until the mixture turns light and fluffy..


Preheat the oven to 350F and pour the filling into a pot and heat the pot over the stove top in medium flame..stir until the filling mixture turns thick..remove from the heat and keep aside..

Brush a rectangular baking pan with melted butter, take the 5sheets from the phyllo dough...Lay one sheet of phyllo on the bottom of the pan, brush the phyllo on the bottom of the pan with butter. Lay another sheet over the first, brush with butter, and continue until half the phyllo sheets have been used.Give the custard a quick whisk and spoon over the bottom layer of phyllo sheets, spreading evenly so it covers the bottom out to the sides with no gaps and no air bubbles.

Using the remaining phyllo sheets, place them one at a time on top of the filling, extending out the side opposite the bottom sheets. Brush each with butter, then one at a time, fold in the extending pieces butter the tops. When all the phyllo has been folded in and corners folded in, brush the top with butter.

Cut the galaktoboureko into serving-sized pieces using a very sharp knife to cut all the way through to the bottom. The phyllo and custard filling are delicate so cut with care.Bake for 30minutes in the middle rack of the oven.Remove from the oven and pour the cooled syrup evenly over the hot pastry. Set aside and allow to cool and absorb the syrup..

Babycorn Pulao

Few years back, babycorns are quite rare to find out in Chinese markets, but now i can get fresh babycorns from chinese store very much easily which is nearby to our house, finally am buying everytime whenever i go to chinese stores and those fresh babycorns are ready anytime to get cooked..This time i want to make rice with those fresh and cute babycorns....While going through my blogger friend's i got hooked with Rak's Babcycorn Pulav and her beautiful pictures tempted me a lot to try out this delicious mild green pulao with babycorns which she tried out from Mrs Mallika Badrinath's cookbook, no doubt this pulao tastes awesome as Mallika Badrinath is one of my favourite among our Indian chefs..I rarely use pressure cooker to make out pulao, but this time i used my pressure cooker coz the original recipe went for pressure cooker which turned out this pulao fabulous within few minutes, needless to say that i was really happy to see my babycorn pulao turned prefect in pressure cooker.


2cups Basmati Rice
15nos Babycorns (as medium size pieces)
2nos Onions (chopped lengthwise)
4cups Coconut milk
2nos Whole spices (bayleaves, cloves, cinnamon stick & cardamom)
1/4tsp Turmeric powder
Salt
Oil

To Grind:
1cup Mint leaves
5nos Garlic
1inch Ginger
3tbsp Grated coconut
3nos Red chillies
3nos Green chillies
1/2tsp Garam masala powder

Soak rice for 15 minutes and i didnt fried the rice as per the original recipe..drain the water and keep the rice in a colander, meanwhile grind all the ingredients given in the list 'To Grind' as fine paste...Heat enough oil in the pressure cooker and fry the whole spices, add the onions saute until they turns transculent, now add the ground masala and fry until the raw smell goes away..

Add the babycorns,saute everything for few minutes(i didnt pressure cooked the babycorns as per the original recipes coz i like the crunchy babycorn bites while eating)..finally add the coconut milk and bring to boil..add the rice and salt and cook everything in pressure cooker with lid closed, cook in simmer for few minutes until the rice get well cooked....

Serve hot with any raitas...

Microwave Brinjal Chips

While i planning to prepare something for this month's Microwave Easy Cooking, the famous microwave cooking event... i wanted to make out something quick,easy,crispy for our evening snacks, after going on through few of my blogger friends, my choice went for Srivalli's brinjal chips which she prepared within few minutes in microwave, actually she have send this microwave brinjal chips for the MEC-Savoury Snacks which i hosted few months back..I enjoyed preparing this easy breezy crispy brinjal chips and we enjoyed having with tomato ketchup also this chips can be served as an appetizier...My little ones relished and finished the whole bowl with ketchup and we just love it...These spicy brinjal chips goes directly to Jayashree's inbox as she is hosting this month's MEC-Celebrating Bloggers,event started by Srivalli..


3nos Brinjals (chopped finely)
1/2tsp Red chilly powder
1/4tsp Pepper powder
Salt
Oil

Toss the finely chopped brinjals with oil, red chilly powder, pepper powder and salt...arrange those spiced brinjal slices as single layer in a plate and cook for 7minutes in high in microwave oven..

Enjoy these crispies with ketchup...

Flax Seeds & Oats Spice Powder/Karamadhu Podi

Usually karamadhu podi is prepared with dals, coriander seeds, red chillies, hing and turmeric powder for making out curries with this podi...My version of karamadhu podi goes for healthy stuffs like flax seeds and oats which i used while roasting the dals and spices...Adding flax seeds and oats turned out this spice powder more healthier and while making out curries with podi u can get a fantastic, healthy and prefect dry curries with any sort of veggies, this spice powder can be conserved in air tightened box for more than a month and very handy while making out stir fries, quick to prepare too also suits prefectly for stuffing okras or brinjals for making out stuffed dishes...Am sending this spice powder to CWS-Coriander seeds guest hosted by RV,event by me...


1cup Coriander seeds
1/4cup Channa dal
2tbsp Urad dal
1tsp Toor dal
1/4cup Flax seeds
10nos Red chillies
1/4cup Rolled oats
Salt
1/2tsp Asafoetida powder
1/4tsp Turmeric powder

Dry roast the channa dal, urad dal,toor dal, dry red chillies until they turns golden brown..now add the coriander seeds and dry roast until the aroma comes out,put off the stove and finally add the rolled oats and flax seeds with asafoetida powder and turmeric powder.stir for few minutes..

Add the salt to the dry roasted ingredients and grind as coarse powder...Use for making out dry curries with any sort of veggies...conserve in air-tightened box and refrigerate for long use...

Cinnamon Flavoured Clementine Juice

If u feel like having something refreshing packed with vitamin C also an easy juice, just have a look at this cinnamon flavoured clementine juice...We are in spring here, clementines are getting almost disappearing from our farmer's market..so needless to say that most of the clementines we get now are almost tangy..I did a mistake of getting some clementines this weekend from farmer's market without any knowledge about their tanginess, as usual none at home wat to have, i can even say that none want even to touch those tangy clementines,so finally i turned them out as a delicious cinnamon flavoured clementine juice by making a syrup with sugar and cinnamon stick which i finally blended along with clementine segments to turn out this refreshing juice packed with vitamin C...Needless to say that the whole jar of this juice vanished within few minutes and everyone at home enjoyed it...Am sending this cinnamon flavoured clementine juice to Madhuri's Serve Me Some...Juices,Smoothies, Shakes...


2nos Clementines (cut as segments)
1tbsp Sugar or as u desire
1cup Water
1no Cinnamon stick(medium) or cinnamon powder as per need
Pinch of Salt
Icecubes

Heat the water, sugar,salt and cinnamon stick,bring them to boil and let them sit for few minutes and get them cool, discard the cinnamon stick, if u r using cinnamon powder strain the sugar syrup...Blend the clementines segments with the cinnamon flavoured sugar water...Strain the juice and serve with icecubes or chilled...

Beets, Corn & Celery Salad

Few days back for making out creamy beets soup, i have bought few beets from my farmer market...I want to make out some salad with those leftover beets which pressure cooked and prepared as salad along with few corn kernels and crunchy celery stem, tossed everything with a simple dressing made with vinegar, pepper powder, salt and olive oil...Easy salad suits incredible for summer day when served cold, also prefect for a simple evening dinner with some toasted bread...We just love it, this beautiful and colourful salad goes directly to Usha's Healthy Inspiration Event-Salads & Madhuri's Serve me some..Salads...


2nos Beetroots (pressure cooked and chopped)
1cup Corn kernels
3nos Celery stem (chopped)
1tbsp Apple Cider vinegar
Salt
Pepper powder
2tbsp Olive oil

Take the chopped beetroots, corn kernels and celery steam in a bowl...meanwhile mix the vinegar,salt, pepper powder and olive oil in a small bowl, while serving the salad pour this dressing over the veggies,toss gently and serve immediately..

Enjoy with bread toasts...

1cup Whole wheat flour
1cup Rolled oats
1/4cup Cornmeal
1cup Buttermilk
1/2tsp Baking soda
1/2tsp Mustard seeds+Urad dal
1/2tsp Channa dal
1/2cup Onions(chopped)
Few curry leaves
Salt
Oil

Mix the whole wheat flour, rolled oats, cornmeal and baking soda with salt and buttermilk as thick batter..heat few drops of oil,fry the mustard seeds, urad dal, channa dal till they turns brown, add the chopped onions and curry leaves and saute until they turns transculent, add this tempered onions to the already prepared batter and mix everything well...

Heat the paniyaram pan,pour few drops of oil n pour a ladle of the batter, put the flame in simmer n cook slowly, turn on both sides until they get well cooked...dont cook in high flame...Enjoy with any sort of chutneys...

Indian Flavoured Pizza - Chappathi Pizza

Nowadays pizza seems to be an important dish anywhere and everywhere in the world..Pizza is one of famous Italian dish after pastas, its a flat bread with tomato sauce topped with veggies and cheese...I do often my pizza dough at home and this time i want to make out with chappathi dough and the chappathi dough worked out wonder and we enjoyed having it...Instead of preparing this pizza in oven, i prepared these chappathi pizza in microwave oven..I prepared few chappathis in tawa as always and topped with spiced veggies and cheese, cooked everything in microwave oven....Its hardly took less than 5 minutes and we enjoyed without any guilt, as the pizza dough was prepared with whole wheat flour, oats flour, yogurt and salt without yeast...Voila quick pizza ready within few minutes and we enjoyed having them...Am sending this Indianized flavoured pizza to Global Kadai-Indian Flavoured Pizza guest hosted by Lavi of Home Cook's Recipes,event started by Cilantro..


Chappathi Dough:
1cup Whole wheat flour
1/4cup Oats flour
1/4cup Yogurt
Water as per need
Salt
Ghee or oil for cooking

Mix all the ingredients in a bowl and knead as smooth and soft dough..keep aside for an hour...makes 5-6 large sized balls and with rolling pin roll them as thick chappathis..cook each chappathis in a hot tawa, drizzled with ghee or oil and cook on both sides until they get well cooked..

For Toppings:
2nos Tomates (sliced lengthwise)
1no Red Onions (chopped finely)
1no Green Bellpepper (chopped as cubes)
1/4tsp Pepper powder
1/4tsp Red chilly powder
1no Garlic cloves (crushed)
Salt
Grated cheese as per need

Mix the tomates, chopped onions, chopped bellpeppers,pepper powder, chilly powder, crushed garlic cloves with salt and toss gently...Spread this spiced veggies over the already cooked chappathis, springle the grated cheese as per need and cook this chappathi pizza for 5minutes in high temperature...

Enjoy these healthy and cheesy chappathi pizza!!!!

Cream Of Beetroot Soup-T&T from The Singing Chef

My second choice from Arundathi's space is this creamy beetroot soup...This soup looks prefect for me since i feel like having soup when its was quite cold here...While going through again in her space, i found out this easy breezy creamy soup with simple ingredients and i tried out immediately..This fantastic pink soup goes for really for easy five ingredients which we usually have anytime at home expect the beets..Yeah this soup goes for chopped carrots, milk, chopped onions and chopped beets prepared with salt and pepperpowder... Potato & Capsicum Curry-T&T from The Singing Chef

Its a real fun to go throught other blogger friend's blog to choose and cook some dishes from their blog na, i loved this tried and tasted event,am trying to participate very often just to enjoy my fellow bloggers virtual treats..This month's choice is Arundhathi's The Singing Chef where u can find almost many Indian recipes from North to South India also many International recipes, its completely a hard task for many of us to choose wat to cook and taste from her blog..Yeah she have so many dishes with easy ingredients which are really very quick to cook out...When i went through her blog, my choice went for potatoes and carrots as i have these veggies always...This potato capsicum curry catched very soon my attention and i immediately want to try out since i love this potato capsicum combination...I prepared this curry and enjoyed with rasam rice, both together works out prefect and awesome...Thanks to The Singing Chef for this simple but yet an easy curry to cook up quickly and am sending this curry to T&T-The Singing Chef guest hosted by Divya of Dil Se, event started by Zlamushka...U can see the original recipe here..also this curry goes to CWS-Coriander seeds guest hosted by RV..


2nos Potatoes (cut as triangles)
2nos Capsicums (chopped)
1tsp Cumin seeds
1/4tsp Mustard seeds
1/4tsp Asafoetida powder
1tsp Chilly powder
1/2tsp Cumin seed powder
1/2tsp Coriander seed powder
Salt
Oil

Heat the oil, let splutters the mustard seeds and cumin seeds & asafoetida powder, add immediately the chopped capsicum and fry for few minutes, add the potatoes, salt, chilly powder, cumin powder and coriander powder and cook everything in simmer for few minutes..Stir occasionally until the potatoes get well cooked and oil get separates...

Serve hot as side dish..

Eggless Orange Pancakes-Am Back

Its was really hard to stay away from my system since a week coz this silly net connection, but somehow i managed to prepare many dishes and tried hardly to forget my favourite space for quiet a week...I got the connection back this afternoon, we guys were really happy to get back our net connection...I have to say my big thanks to all my blogger friends for leaving me their encouraging and lovely words, which boosted me definitely, also i was really happy to see ur mails and comments..Thanks a lot friends...

Voila, am here with some delicious pancakes i prepared before few days back with some tangy oranges which were laying in our fruit basket and none wanted to have them even as salads, i prepared this pancakes and those oranges flied within few seconds and turned as delicious,soft, fluffy also a filling morning breakfast with some hot coffee or chocolate..Needless to say that this pancakes goes to me own event and to JFI-Breakfast guest hosted by Suma, event by Indira and to my own Pancakes event..


1+1/2cups All purpose flour
1/2cup Brown rice flour
2tsp Orange rinds
1cup Fresh orange juice
1/2cup Buttermilk
1/2tsp Baking soda
1tsp Baking powder
1/4cup Brown sugar
Butter or oil

Mix both the flours along with baking powder and baking soda and keep aside...mix the orange juice, buttermilk, orange rinds, sugar and whish everything until the sugar get dissolves..add slowly the wet ingredients to the dry ingredients and turn as smooth and thick batter...

Heat a griddle and generously grease with butter or oil. Pour out batter for pancakes..Cook until the batter looks bubbly on top, flip over and cook the underside. Repeat with remaining batter...

Short break-An Obligation

Sorry friends, i could nt post anything since few days coz of my bad internet connection which put me down since a week, friday morning i was planning to post my recipes and i wasnt able to upload the pictures, then only i saw that my internet connection has gone, i called the customer service and complained about my internet connection, they send a techinician after four days that too on yesterday and they checked everything saying that they couldnt able to connect with mine coz its all because of the french telecom, i called again finally the french telecom service and they told that they will do the necessary within a week..So dear friends, i cant able come online or post a recipe atleast before a week, finger crossed to get my connection atleast before the end of the month, rite now am typing this message from a cybercafe, where i never ever liked to go, but i cant able to sit idle,even its kinda hard for me that i cant able to chitchat with u all guys...SORRY for this situation, will definitely come to all ur spaces and definitely comment for all ur virtual treats...

Egg Kurma (No Ginger-Garlic Paste)

Whenever i run out of ginger and garlic, i do prepare this simple version of kurma along with poppy seeds, fennel seeds,coriander seeds and grated coconut...This is how my grandma used to make out her kurma eventhough its quite an easy and simple way of kurma which never  fails in its authentic taste,  with this simple and incredible kurma paste..I still remember my mom used to make this sort of kurma often for our sunday lunch with briyani and raita...This delicious kurma is really quite easy to make out and can do with any sort meats and veggies..I prepared this kurma along with spinach n flax seeds paratha and our dinner turned out really fantastic...Am sending this kurma to CWS-Coriander Seeds guest hosted by RV, event by me..


5nos Eggs (hard boiled)
1no Onion (chopped finely)
1no Tomato (chopped finely)
2nos Green chillies (slit opened)
1/4tsp Red chilly powder
1/2tsp Mustard seeds
1/2tsp Fennel seeds
2nos Bay leaves
2tbsp Coriander leaves (chopped)
Salt
Oil

To Grind:
1tbsp Poppy seeds
1tbsp Coriander seeds
1tsp Fennel seeds
1/4cup Coconut (grated)

Dry roast one by one all the ingredients from the list 'To Grind', ground everything as fine paste with enoug water...Heat enough oil, fry the mustard seeds, fennel seeds and bay leaves until brown, add the finely chopped onions, finely chopped tomatoes ,slit opened green chillies and saute everything until the veggies turns transculent, now add the grounded paste,red chilly powder,salt and saute for few minutes..add enough water and cook the gravy until its turns thick..cut the hard boiled eggs as two pieces and add gently to the cooking gravy...

Cook everything in simmer for few minutes, finally add the chopped coriander leaves and put off the stove...Enjoy along with rotis or any rice dishes...

Eggless Pumpkin,Oats & Nutella Muffins

Nutella, a famous chocolate spread took an important place in our weekend breakfast and while the weekdays its kinda hard for us to enjoy this chocolate spread which everyone at home can finish the whole bottle within few hours..But somehow i manage to give them atleast some spoons just for weekends..When i was planning to make out some muffins with leftover pumpkin chunks, my mind went for nutella and i dropped a teaspoon of this chocolate spread in the center of those eggless pumpkin muffins before they get baked, once i took out from the oven my little one was sitting besides to this muffins until they get cooled a bit, yes the aroma came out of the baked muffins with nutella completely dominated our home and even my next door friend was asking me wat i baked today when i opened my door..I was really happy to see the pumpkins muffins vanished within few minutes, coz whenever i make pumpkin bakes, they will get vanished rarely at home and this time its doesnt happen, all credits goes to the famous nutella spread...As usual i prepared this pumpkin bakes with rolled oats also this muffins are eggless..



1cup Pumpkin puree
1/2cup Butter (room temperature)
3/4cup Sugar
1/4cup Milk
1+1/2cup All purpose flour
1cup Rolled oats
1/2tsp Baking soda
1tsp Baking powder
Nutella spread as per need

Preheat the oven to 350F..Beat the sugar and butter until they turns soft and creamy..meanwhile mix the flours, baking soda and baking powder, add pumpkin puree to the sugar-butter mixture... beat until the puree get well mixed,now add the all the dry ingredients along with milk and mix well with a spatula, dont overmix..

Pour the muffin batter over the muffins pan until 3/4th to the pan, gently drop the nutella spread to the center of the muffins and arrange the muffins pan to the middle rack and bake for 20-25minutes or a skewer insert comes out clean..


Enjoy warm, am damn sure that melted nutella spread will definitely tastes divine!!!

Spinach & Flax Seeds Paratha

Usually i used to grind spinach with spice powders to make out parathas with spiced spinach puree..This time i dont want to prepare parathas with spinach puree so my choice went to finely chopped and coarsely grounded spinach along with yogurt and prepared this parathas with  wheat flour along with cumin seeds, whole flax seeds and garam masala...This spinach parathas tastes fantastic for a simple dinner with some easy breezy chutneys or with simple gravies...Simple, greeny but healthy spinach parathas prepared along with whole flax seeds to give more healthiness to this simple spinach paratha which i served along with egg kurma and we loved it...


3cups Wheat flour
1cup Spinach (chopped finely)
2tbsp Flax seeds
1/2tsp Cumin seeds
1tsp Garam masala powder
1cup Yogurt
Salt
All purpose flour for dusting

Grind the chopped spinach coarsely along with yogurt ..In a large bowl, take the wheat flour,garam masala powder,cumin seeds,salt and whole flax seeds and knead as smooth dough along with spinach-yogurt mixture..keep aside for half an hour..Make 10-12medium sized balls from the dough, dust with all purpose flour and roll as circular or square shaped parathas with rolling pin...

Heat a pan and drop gently the parathas to the hot pan,drizzle the oil to the paratha... cook on both sides until they get well cooked..Serve along with any gravies..

Cold Beet & Garlic Salad-Pantzaria Salata

If u really want to make out some quick salad with simple ingredients, else if u have bought some beets and u dunno wat to make out u should definitely try out this easy,simple, quick and refreshing greek salad with beets and minced garlic..This salad can be prepared within few minutes and this salad can be served cold, a prefect salad for hot summer and suits prefect for chilled evening dinner when they are served along with some warm soup....We enjoyed having this salad...Greek Cuisine is completely a new cuisine which am finally learning rite now and thanks to CL for choosing Greek cuisine as this month's AWED theme..Its really a great opportunity to learn and enjoy foods from other cuisine, no doubt my family is really enjoying my recent greek culinary adventure...Obivously this pantzaria salata goes directly to CL's inbox as she is hosting this month's AWED-Greek,started by DK and to Usha's Healthy Inspirations Event - Salads..


2nos Beets (cooked&sliced)
2nos Garlic cloves (minced)
2tbsp Olive oil
2tbsp Red wine vinegar

Take the sliced beets along with minced garlic cloves, meanwhile make a sauce with olive oil, vinegar, salt and pepper powder..

Toss the beets and garlic with this olive oil dressing and leave them in fridge covered for few hours before serving...Enjoy this refreshing salad!!

Needless to say about Pancakes, its a sort of quick breads,some used to make out with fermented batter or either with quick and instant batter...I do often pancakes almost thrice a month for our sunday breakfast and serve along with nutella spread, we just love it...Depending on the region, pancakes may be served anytime with any topping which goes for jam, fruit, syrup or else with meats...American or Canadian pancakes are called as flapjacks, griddle cakes or hot cakes while French people call them as crêpes...Each country have their own version of pancakes, i really want my blogger friends to share their own or creative and innovative pancakes with me as anything sort of pancakes with meat, veggies, cheese also as sweet version..Anything as pancakes are welcome to participate in this pancakes event...

Babycorn Manchurian

It has been ages i had this babycorn manchurian, after a long i bought fresh babycorns from chinese store and prepared out this babycorn manchurian....Lipsmacking appetizier, can enjoy without any guilt...Do you know that babycorn ears are hand picked and corns generally matures very quickly,so the harvest of babycorn must be timed carefully to avoid ending up with more mature corn ears...Baby corn are typically eaten whole as raw or cooked along with other veggies, one of the famous Indo-chinese dish is manchurian and babycorn suits prefectly to make out manchurians..This simple stir fry with bellpeppers and onions tastes fantastic as appetizier, as side dish with cooked rice...Babycorn manuchrian is my family's favourite dish and this dish goes obviously to Shama's Family Favourites..


15nos Babycorns(cut into medium pieces)
1/2cup Rice flour
1/2tsp Baking powder
1/2cup Cornflour
1tsp Garlic paste
1tsp Ginger paste
1tbsp Green chili paste
2-3 Spring onions(chopped finely)
1no Onion(diced)
2nos Capsicum (cut into small square pieces)
2nos Garlic(chopped)
2tsp Soya sauce(dark)
2tbsp Tomato sauce
1tsp Rice Vinegar
1tbsp Cornflour dissolved in water
Salt to taste
Oil for deep frying the baby corns
Oil for sauce

Boil water in a pan and add Babycorn pieces and Salt and cook for 5 minutes so the babycorn becomes tender.

In a large bowl, combine rice flour, cornflour, baking powder, salt, soy sauce, garlic/ginger paste and 1 tablespoon green chili paste.Mix well with water to get a batter fo medium consistency.Heat oil in a pan.Deep the babycorn pieces in the batter and deep fry in oil. Drain the excess oil and set aside.

In a flat pan, add some oil and when it smokes add the chopped onions and capsicum and fry only till they start becoming translucent.Now add the chopped garlic,salt, pepper powder and fry for a minute . Add the soy sauce and vinegar and stir for a minute. Reduce the heat and then add the cornflour-water. The mixture will start to thicken, keep on stirring on low heat and when the mixture turns semi thick add the tomato Sauce and then add fried babycorns. Stir continuously for a couple of minute when it becomes soft and crispy, take it out from fire.

Garnish with chopped spring onions. Serve hot with noodle or fried rice or as appetizier..

Baby Potato Roast

Who will say no to potato roast??? not me..i can live just with a kg of potatoes and a chocolate bar for a week,just love both potatoes and chocolate that much....Last week i bought some baby potatoes, its has been a long i bought baby potatoes and i dont want to miss to prepare some roast with those cute, tiny potatoes, this roast doesnt need any chopping, grinding or special spice powder, i simply prepared this roast with red chilly powder, coriander powder with cooked baby potatoes and tempered them with cumin seeds,finally cooked everything with enough oil until the spice powders get well roasted, a prefect side dish for sambar or rasam rice...I enjoyed having this simple but a delicious potato roast with rasam, both together tastes marvellous..Truly divine, am sending this easy potato roast to CWS-Coriander Seeds guest hosted by RV, event started by me..


1/2kg Baby potatoes
1tsp Red chilly powder
1tbsp Coriander powder
1tsp Cumin seeds
Few curry leaves
Salt
Oil

Cook the baby potatoes separately in water with enough salt until they turns soft, peel the skin and cut them as two pieces...

Heat enough oil, let fry the cumin seeds and curry leaves, add the baby potatoes, saute for few minutes, add the red chilly powder, coriander powder and salt, give a stir, springle some water and cook in medium flame until the potatoes get well roasted..

Serve hot as side dish...

Pumpkin Pancakes

Pumpkin pancakes, another healthy pancakes with pumpkin puree, oats, whole wheat flour,brown rice flour, all purpose flour,yogurt, with honey and maple syrup as eggless version....Quick, simple, healthy and delicious pancakes suits prefect for morning breakfast also for evening snacks..Mild orange coloured pancakes tastes fantastic when served along with maple syrup, my lil ones enjoyed this pancakes with nutella spread...Real feast to enjoy without any guilt, a prefect way to enjoy pumpkins and quite easy to feed anyone whoever doesnt like pumpkins..



1/2cup Rolled Oats
1cup Yoghurt
1/2cup Whole Wheat pastry flour
1cup Brown rice flour
1cup All purpose flour
1cup Pumpkin puree (pressure cooked & pureed)
1/2tsp Baking powder
2tsp Honey
1tbsp Maple Syrup
1/2tsp Nutmeg powder
1/2tsp Cinnamon powder
pinch Salt
Oil as per need

Mix whole wheat pastry flour, brown rice flour,rolled oats,all purpose flour,pumpkin puree,baking powder, honey, nutmeg powder, cinnamon powder n salt...make them as thick batter...

Heat a nonstick pan r tawa..pour a ladle of pancake batter n cook on both sides until they turns brown..

Serve warm along with maple syrup!!

Eggless Banana, Oats & Chocolate Muffins

Its has been a long i wanted to make out muffins at home and finally i prepared with some leftover over ripen bananas which were laying since a few days and none wanted to have them, those sad over ripen bananas were looking at me, so its was quite like an obligation for me to add those over ripen bananas to this muffins,u may ask y i didnt throwed them out, most of my readers will definitely know that am not a person to trash anything that much easily, i usually find out some alternative way to enjoy those left over fruits, thats the way my choice went to this banana, oats muffins but i love to add chocolate chips as am a great chocoholic person, this time instead of adding chocolate chips my choice went to chocolate bars which i used in this muffins and those melted chocolate bar pieces tastes fantastic while having this warm muffins...This muffins can suits fantastic for both breakfast also for snacks that too for kids to enjoy.. A prefect healthy muffins to enjoy for a quick and lazy morning also as a healthy snack...


2nos Bananas
1/2cup Butter (room temperature)
3/4cup Sugar
1/4cup Milk
1+1/2cup All purpose flour
1cup Rolled oats
1/2tsp Baking soda
1tsp Baking powder
12nos Chocolate bar pieces or as per ur need

Preheat the oven to 350F..Beat the sugar and butter until they turns soft and creamy..meanwhile mix the flours, baking soda and baking powder also smash the bananas as puree and add this puree to the sugar-butter mixture... beat until the puree get well mixed,now add the all the dry ingredients along with milk and mix well with a spatula, dont overmix..

Pour the muffin batter over the muffins pan until 3/4th to the pan, gently drop the chocolate bar pieces to the center and arrange the muffins pan to the middle rack and bake for 20-25minutes or a skewer insert comes out clean..
