Creamy Pumpkin N Apple Soup

While browsing, saw that Madhuram announced for AFAM october 2008, the fruit of the month is Pumpkin...i love pumpkins as soup..its too cold here n rainy..they will be perfect as soup while its too cold,so i bought pumpkin pieces in chinese store, back home i want to prepare them as something creamy with pumpkin..started preparing for the soup, suddenly i saw two green apples were laying in my fruit basket..as they r bit sour, none want to have them, thought of adding them along the pumpkin pieces for preparing them as soup..They turned up wonderful with bit sour n sweet n creamy..here we go for..


2cups Pumpkin pieces
1cup Green apple pieces
1no Onion chopped
2nos Potatoes chopped
5nos Garlic pieces
2nos Vegetable stock cubes
1/4tsp  Pepper powder
3stalks Parsley leaves
1cup Low fat milk
Salt
Olive oil

Heat 2tsp of Olive oil in a pressure cooker..add the chopped onions n garlic to the hot oil n stir them until the onions turns transculent, now add the potatoes, pumpkin pieces with vegetable stock cubes n cook for a while, add the chopped apple pieces n parsley leaves as well as salt n pepper powder to the pressure cooker..cook just for few minutes, add 1cup of water to the cooked veggies n close them with lid, let them cook upto 3 whistles..put of the stove..keep aside..

Once the pressure get released, blend the cooked veggies with a hand blender n add the milk to the soup..just bring them to boil n put off the stove...just sprinkle pepper powder r white pepper powder while serving..

Creamy Pumpkin n apple soup is ready to serve..serve them hot with toasted bread slices..

Yes Priya, it's definitely a new combination for me too. I've used vegetable stock which is available in cartons? But what is veg. stock cube? What's the brand name? I would like to try that too.

Hi Madhuram..u can also those vegetables stocks too..here am getting them as powder as well as cubes.. the brand name which am using is knorr, even maggi brand products r available as cubes..hope this helps.. for ur dropping ur comments, its a real pleasure to participate on ur event..
